Hawaiian Chicken Kabobs
Tropical and tangy Hawaiian chicken kabobs, perfect for summer grilling.
Ingredients
- 1 lb boneless chicken breast cubed
- 1 fresh pineapple cut into chunks
- 2 bell peppers cut into chunks
- 1 red onion cut into chunks
- 1/2 cup soy sauce liquid
- 1/4 cup brown sugar packed
- 1 tbsp sesame oil liquid
- 2 cloves garlic minced
- 1 tsp ginger minced
- 2 tbsp apple cider vinegar liquid
- 8 skewers pre-soaked in water
Instructions
- In a mixing bowl, whisk together soy sauce, brown sugar, sesame oil, garlic, ginger, and apple cider vinegar to create the marinade.
- Place the chicken cubes in the marinade and let it sit for at least 1 hour in the refrigerator.
- Preheat grill to medium-high heat.
- Thread the chicken, pineapple, bell peppers, and red onion onto skewers alternately.
- Grill kabobs, turning occasionally, until the chicken is fully cooked and the vegetables are tender, about 10-15 minutes.
- Serve the kabobs hot, possibly over rice, garnished with sesame seeds or chopped cilantro if desired.
