Energy Balls
These no-bake energy balls are a perfect healthy snack, packed with natural sweetness, texture, and nutrients. Made with dates, cashews, honey, and various optional add-ins to customize flavor and nutritional content.
Ingredients
- 1 cup Dates, pitted Medjool preferred for natural sweetness and sticky texture
- 1 cup Cashews raw or roasted, depending on preference
- 2-3 tablespoons Honey adjust to taste
- 1/2 cup Oats optional for texture and to make more filling
- 2 tablespoons Chia Seeds or Flaxseeds optional for added fiber and nutrients
- 1 teaspoon Vanilla Extract optional for flavor
- 2 tablespoons Cocoa Powder optional for chocolate flavor
- 1/4 cup Shredded Coconut optional for coating the balls and added flavor
- 1/4 cup Protein Powder optional to increase protein content
- a pinch Salt optional to enhance flavors, especially if using unsalted cashews
Instructions
- Soak the dates in warm water for about 10 minutes if they are not soft. Then drain them and set aside.
- In a food processor, blend the dates and cashews until they form a sticky, dough-like consistency. You might need to stop and scrape down the sides a few times.
- Add the honey and any of the optional ingredients you like into the food processor. Pulse until all ingredients are well combined and the mixture sticks together easily.
- Using your hands, roll the mixture into small balls, about the size of a walnut.
- Roll the balls in shredded coconut or cocoa powder for an extra flavor and texture (optional).
- Place the balls on a baking sheet lined with parchment paper and refrigerate for at least 1 hour to set.
