Sweet Potato Brownies

A healthy twist on the classic brownie, these Sweet Potato Brownies are moist, chocolatey, and delicious.

Ingredients
  • 1 mashed sweet potato cup
  • 1/2 almond butter or peanut butter cup
  • 1/4 cocoa powder cup
  • 1/4 honey or maple syrup cup
  • 1 egg whole
  • 1/2 baking soda tsp
  • 1 vanilla extract tsp
  • 1 salt pinch
  • 1/4 dark chocolate chips cup (optional)
Instructions
  1. Preheat oven to 350°F (175°C) and grease a small brownie pan.
  2. Mix the mashed sweet potato, almond butter, cocoa powder, honey, egg, baking soda, vanilla, and salt until smooth.
  3. Fold in the chocolate chips if using.
  4. Pour the batter into the pan, spreading evenly.
  5. Bake for 20-25 minutes until set and a toothpick comes out clean.
  6. Cool before cutting into squares.
