Sweet Potato Brownies
A healthy twist on the classic brownie, these Sweet Potato Brownies are moist, chocolatey, and delicious.
Ingredients
- 1 mashed sweet potato cup
- 1/2 almond butter or peanut butter cup
- 1/4 cocoa powder cup
- 1/4 honey or maple syrup cup
- 1 egg whole
- 1/2 baking soda tsp
- 1 vanilla extract tsp
- 1 salt pinch
- 1/4 dark chocolate chips cup (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a small brownie pan.
- Mix the mashed sweet potato, almond butter, cocoa powder, honey, egg, baking soda, vanilla, and salt until smooth.
- Fold in the chocolate chips if using.
- Pour the batter into the pan, spreading evenly.
- Bake for 20-25 minutes until set and a toothpick comes out clean.
- Cool before cutting into squares.
