Soft Banana Blueberry Cookies

Ingredients
- 2 ripe bananas mashed
- 3/4 cup granulated sugar granulated
- 1/2 cup unsalted butter softened
- 1 egg whole
- 1 tsp vanilla extract liquid
- 2 cups all-purpose flour sifted
- 1 tsp baking soda granulated
- 1/2 tsp salt granulated
- 1 cup fresh blueberries whole
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the mashed bananas, sugar, and softened butter until smooth.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the sifted all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the fresh blueberries gently to avoid breaking them.
- Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the cookies are golden brown and set.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
