Pork Sausage and Bean Delight
A hearty dish combining pork sausage with beans for added fiber. Perfect for a fulfilling meal.
Ingredients
- 4 pork sausages whole
- 1 can cannellini beans drained and rinsed
- 1 onion finely chopped
- 2 garlic cloves minced
- 1 can diced tomatoes with juice
- 2 cups chicken stock unsalted
- 2 tbsp olive oil
- to taste salt
- to taste black pepper
- for garnish fresh parsley chopped
Instructions
- Heat olive oil in a large skillet over medium heat. Add the onions and garlic, cooking until softened.
- Add pork sausages to the skillet and cook until browned on all sides.
- Stir in the cannellini beans, diced tomatoes with juice, and chicken stock. Bring to a simmer.
- Season with salt and black pepper. Cover and let simmer for 20 minutes, or until the sausages are cooked through and the flavors have melded.
- Garnish with fresh parsley before serving.
