Hearty Lentil Soup
A nourishing and flavorful lentil soup, perfect for any season.
Ingredients
- 2 tablespoons olive oil N/A
- 1 onion diced
- 2 carrots diced
- 2 celery stalks diced
- 2 garlic cloves minced
- 1 cup dried lentils rinsed
- 4 cups vegetable broth N/A
- 1 can (14 oz) diced tomatoes with juice
- 2 cups spinach fresh
- 1 tablespoon lemon juice N/A
- to taste salt N/A
- to taste black pepper N/A
- 1 teaspoon thyme dried
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the dried lentils, vegetable broth, and diced tomatoes with their juice. Bring the mixture to a boil.
- Reduce the heat to low, cover, and simmer for about 30 minutes, or until the lentils are tender.
- Stir in the spinach and cook until it wilts, about 2-3 minutes.
- Add the lemon juice, salt, and pepper to taste, and stir in the dried thyme.
- Serve the soup warm.
