Hearty Lentil Soup

A nourishing and flavorful lentil soup, perfect for any season.

Ingredients
  • 2 tablespoons olive oil N/A
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 2 garlic cloves minced
  • 1 cup dried lentils rinsed
  • 4 cups vegetable broth N/A
  • 1 can (14 oz) diced tomatoes with juice
  • 2 cups spinach fresh
  • 1 tablespoon lemon juice N/A
  • to taste salt N/A
  • to taste black pepper N/A
  • 1 teaspoon thyme dried
Instructions
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the dried lentils, vegetable broth, and diced tomatoes with their juice. Bring the mixture to a boil.
  5. Reduce the heat to low, cover, and simmer for about 30 minutes, or until the lentils are tender.
  6. Stir in the spinach and cook until it wilts, about 2-3 minutes.
  7. Add the lemon juice, salt, and pepper to taste, and stir in the dried thyme.
  8. Serve the soup warm.
