Vegan Oatmeal Chocolate Chip Cookies
Delicious and chewy vegan cookies loaded with oats, chocolate chips, and a hint of cinnamon. Perfect for snack time or a healthy dessert.
Ingredients
- 1 1/2 cups rolled oats dry
- 3/4 cup whole wheat flour dry
- 1/2 tsp baking soda dry
- 1 tsp cinnamon ground
- 1/4 tsp salt dry
- 1/2 cup coconut oil melted
- 3/4 cup brown sugar packed
- 1 tsp vanilla extract liquid
- 1/4 cup almond milk liquid
- 1 cup vegan chocolate chips solid
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix together oats, flour, baking soda, cinnamon, and salt.
- In another bowl, combine melted coconut oil and brown sugar until smooth. Stir in vanilla extract.
- Add dry ingredients to wet ingredients and mix well. Gradually add almond milk to form a dough.
- Fold in chocolate chips.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until edges are lightly browned.
- Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
